Ingredients

  • 2 tablespoon – chili powder
  • 2 teaspoon – cumin, ground
  • 1 teaspoon – coriander
  • 1/2 teaspoon – cloves, ground
  • 1 teaspoon – onion powder
  • 1 teaspoon – garlic powder
  • 1 teaspoon – sea salt
  • 1 teaspoon – oregano, dried
  • 3 pound – pork loin
  • 1 each – bay leaf
  • 1 1/2 cup – water
  • 8 medium – tortillas, corn
Toppings:
  • 1 cup – pinto beans
  • 1 cup – lettuce, romaine
  • 1 medium – avocado
  • 1 medium – tomato, red
Dressing:
  • 1/4 cup – Greek yogurt, plain
  • 1/4 cup – LIME JUICE
  • 1/4 cup – cilantro

Directions

  1. Mix chili powder, cumin, coriander, cloves, onion powder, garlic powder, salt, and oregano in a bowl. Fully coat pork with spice mixture and place in crock pot. Add bay leaf and water. Cook on low for 6-8 hours.
  2. Shred pork, rinse and drain beans, shred lettuce, cube avocado, and chop tomato; set all aside separately.
  3. Mix together the yogurt, lime juice, and chopped cilantro; set aside.
  4. Add tortillas to serving area and allow everyone to assemble their own tacos.

We had company coming over for Sunday dinner, so I did 1 1/2 times the recipe. The house smelled great all day long and it was a really easy, yummy meal to serve for lots of people. We had chips and salsa, too and a nice fruit salad. The pinto beans were an especially great addition and we also served with shredded cheese and flour tortillas instead of corn ones (because don’t really like corn tortillas.)
