Raceway Rice
Serves: 8 servings

Ingredients

  • 2 serving 2 oz – turkey sausage
  • 2 cup, chopped – bell pepper, red
  • 1 cup, chopped – onion
  • 1 tsp – turmeric, ground
  • 1/4 tsp – salt
  • 5 oz – Shrimp, mixed, cooked
  • 3 cup – brown rice, cooked
  • 3 cup – chicken broth, low-sodium
  • 4 fruit (2" dia) – kiwi
  • 1 tablespoon – olive oil

Directions

  • Cook rice according to package if not done beforehand.  (1 cup rice uncooked)
  • Begin by cutting sausage into smaller, bite-sized pieces. Heat a large skillet over medium-high heat and cook sausage until browned and no longer pink; 2-3 minutes.
  • Add olive oil and chopped peppers, onions, turmeric and salt to pan. Cook 3-4 minutes, stirring to keep from sticking. Add rice, broth, and shrimp; cook for 1-2 minutes longer or until thoroughly heated.
  • Serve with sliced kiwi.
