Ingredients

  • 4 large – egg
  • 2 large – egg white
  • 4 tablespoon – water
  • 2 cup, chunks – pineapple
  • 1 medium – bell pepper, green
  • 3 slice – ham, deli sliced
  • 1 tablespoon – butter, unsalted
  • 4 medium – tortilla, whole wheat

Directions

  1. Whisk together eggs and water in a bowl. Chop or crush 1 cup pineapple (or simply use canned crushed pineapple); chop bell pepper and ham.
  2. Add butter to a hot skillet and cook the ham and bell pepper for 3-4 minutes. Stir in egg mixture and crushed pineapple. Scramble until eggs are cooked through, stirring constantly.
  3. Evenly divide the egg mixture among the tortillas. Roll up tightly and serve with remaining pineapple chunks on the side.
