Ingredients

  • 1/2 lb – beef flank steak, lean
  • 1 medium – onion
  • 1/2 cup – salsa
  • 1/8 cup – cilantro
  • 2 tablespoon – LIME JUICE
  • 2 clove – garlic
  • 1/2 tablespoon – chili powder
  • 1 teaspoon – cumin, ground
  • 1/2 teaspoon – salt
  • 1 medium – bell pepper, red
  • 1 cup, pieces or slices – mushrooms, white
  • 6 medium – tortilla, whole wheat
Toppings:
  • 1/4 cup – SOUR CREAM, LIGHT
  • 1/4 cup – cheddar cheese, shredded

Directions

  1. Trim any fat from steak and cut into strips. Sear, and place in slow cooker.
  2. Chop onion, cilantro, and garlic; add to slow cooker along with salsa, lime juice, and seasonings.
  3. Cover and cook on low for 5-6 hours.
  4. Chop bell pepper and mushrooms. Add to slow cooker and cook for another hour.
  5. Preheat oven to 250°F. Wrap tortillas in foil and bake until warmed through (or heat one at a time in a microwave if preferred). 
  6. Wrap fajita mixture in warmed tortillas and garnish with desired toppings.
  7. Serve with your favorite fruit on hand.
