Easter Eggs and Tropical Fruit Salad

Easter Eggs and Tropical Fruit Salad
Serves: 4 servings

Ingredients

  • 8 large – egg
Serve With:
  • 1 medium – orange
  • 2 medium – kiwi
  • 1 medium – banana
  • 2 cup – pineapple
  • 1 teaspoon – ginger root, fresh
  • 1/4 cup – coconut flakes
  • 1 cup – cranberries, dried

Directions

  1. Hard-boil eggs.
  2. Meanwhile, peel and dice orange, kiwis, banana, and pineapple; and mince ginger. Combine all ingredients in a large mixing bowl. Serve immediately along with cooled eggs, or cover and store in the refrigerator for later.
  3. If desired, garnish fruit salad with a sprig of fresh cilantro before serving.
For added pizzazz, spend some time with the kiddos and decorate the cooked eggs before serving. This can be done a day or two in advance if desired--hard-boiled eggs keep GREAT in the refrigerator!
