Ingredients

  • 1 pound – beef stew meat
  • 2 medium – russet potato
  • 2 cup – beef broth
  • 1 cup – tomato and vegetable juice, low sodium
  • 2 stalk – celery
  • 2 medium – carrot
  • 1 medium – onion
  • 3 each – bay leaf
  • 1/2 teaspoon – salt
  • 1/2 teaspoon – thyme, dried
  • 1/2 teaspoon – chili powder
  • 1/4 teaspoon – black pepper, ground
  • 1 tablespoon – cornstarch
  • 1 tablespoon – water
  • 1/2 cup – corn, frozen
  • 1/2 cup – green peas, frozen
Serve With:
  • 2 cup – grapes

Directions

  1. In a 3-qt slow cooker, combine the first 12 ingredients. Cover and cook on low for 7-8 hrs or until meat is tender. Discard bay leaves.
  2. In a small bowl, combine the cornstarch and water until smooth; stir into stew. Add corn and peas. Cover and cook on high for 30 minutes or until thickened.
  3. Serve stew hot with grapes on the side.

“•1 cup – tomato and vegetable juice, low sodium” Hi! What does this ingredient exactly mean? a blend of tomato and any vegetable? Could I use tomato puree perhaps 1/2 a cup instead? Thanks!
