Ingredients

  • 1 1/4 cup – chocolate chips, dark
  • 1 cup arils (seed/juice sacs) – pomegranate
  • 1/2 cup – almonds, whole

Directions

  1. Heat the chocolate in the microwave, stirring every 30 seconds until melted; or heat in a double broiler, stirring constantly.
  2. Mix half of the pomegranate seeds and almonds into the chocolate.
  3. Spread the mixture into a glass baking dish lined with parchment paper. You can spread it as thin or thickly as you wish.
  4. Top with the remaining seeds and nuts, pressing down gently so they will stick.
  5. Refrigerate for 2-3 hours until firm.
  6. Cut the bark roughly with a knife or break it into uneven pieces. No need to be perfect!
  7. Store in an airtight container in the refrigerator for up to two weeks, or freeze for up to 6 months.
