Rainbow Sandwich
Ingredients
- 8 slice bread, whole wheat
- 1 medium bell pepper, red
- 1 medium bell pepper, yellow
- 4 ounce cheddar cheese
- 1 medium cucumber
- 1/4 cup CABBAGE, RED
Serve With
- 1 cup hummus
- 2 medium carrot
- 1 cup pineapple
- 1 cup sugar snap peas
- 2 medium banana
Instructions
- Cut crust from bread and quarter each slice.
- Cut peppers into large pieces, approximately the same size as the bread. Repeat with the cheese, cucumber, and cabbage. Set everything aside separately.
- Spread each mini bread square with hummus and layer the vegetables and cheese into a colorful stack.
- Cut carrots into sticks and pineapple into chunks. Add equal portions to each serving dish or lunchbox, along with sandwich quarters, sugar snap peas, and half a banana.
