Quinoa Tabbouleh Salad
Ingredients
- 1 cup quinoa, uncooked
- 2 clove garlic
- 1 cup chopped parsley, fresh
- 1/4 cup mint, fresh
- 1 medium cucumber
- 1 medium tomato, red
- 2 stalk green onion
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper, ground
- 1/4 cup olive oil
- 3 tablespoon lemon juice
- 1/4 cup raisins, seedless
- 1/4 cup pine nuts, dried
Serve With
- 4 medium orange
Instructions
- Cook the quinoa according to package instructions. Cool slightly.
- Mince garlic, chop parsley and mint. Peel and chop cucumber, dice tomato, and slice green onions.
- Add all of these to a large bowl along with the quinoa. Stir in remaining ingredients.
- Serve with orange wedges.
