She was used to baking them for an hour on the weekends, and she had never thought to chop and steam a sweet potato. I told her it only takes about fifteen minutes to get the veggie soft and tender.

Now that she knows about the steaming trick, she buys and eats sweet potatoes all the time! Which is so awesome.

I have to be honest, I hadn’t ever eaten them cooked until I was at Darrell’s parents for Thanksgiving one year – I was 20 years old! Growing up we ate them raw – like carrot sticks. I loved them, they were sweeter than a carrot and just as crunchy. I bet it even had more nutrients that way over the way I love them now – with marshmallows, brown sugar and LOTS of butter!! Yum!

OOOh, Tia, Wade never told me about eating them raw. I just tried it and love it. I like it better than a carrot. I’m going to cut them up and tell my kids they are carrots and see what they say.

My elementary student loves them for school lunch. We microwave them in a potato bag and put cheese and bacon on them in foil or thermos or I put butter on them and send a small shaker with cinnamon in it for her to add at school. I’ve also cut them in wedges/circles and sent the cinnamon shaker.

I’m looking at your pictures and trying to figure out what type of steamer you are using? It looks like a pot that goes on the stove. Is it a small steamer pot and insert that goes on the stove and is small to hold just 1 sweet potato???

Thanks for this recipe. Can’t wait to try it! My daughter loves sweet potatoes. I usually microwave then mash with brown sugar.
