  • 1 medium beet
  • 1 cup hummus
  • 2 medium cucumber
  • 4 medium carrot


  • Be sure you beet has been roasted and fully cooled ahead of time.
  • Place beet into food processor and blend until smooth, and only small pieces remain.  Add hummus and blend together to make pink!
  • Cut vegetables and serve with hummus.
