Pea Salad for Picky Eaters

I’m so excited to launch letter P week!  There are so many amazing foods that start with the letter P, from pancakes to poppy seeds, to pumpkin… it’s a pretty long list.

I’ll never forget my neighbors 2 year old getting frozen peas for himself right out of the freezer and eating them that way!  My own 2 year old nephew calls them grapes!  Some kids, just like peas.  Mine, not so much.  Preparing them in this tangy salad however is a way I’ve been able to change their minds.  This recipe is very forgiving and you can add a myriad of different veggies

More Peas Salad Recipe

  • 1 bag frozen peas, thawed (10-12 ounces)
  • 1 Cup chopped potato, cooked and chilled
  • 1 cup onion (red or white)
  • 1 cup celery
  • 1 cup chopped tomato
  • 1 Cup chopped cheddar cheese

Dressing:

  • 1/4 cup light mayonnaise
  • 1/4 cup plain yogurt
  • 1 TBLS apple cider vinegar
  • 1 tsp. dried mustard

Mix veggies together in a bowl. In separate bowl, mix dressing. Combine just before serving.

Interesting new research has shown that green peas are actually a good source of Omega 3 Fat!  In 1 cup of green peas, there are 20 mg of ALA. Technically a legume, you can also find beta carotene and vitamin E in peas. Very cool!

In our house peas are called mother nature’s candy. We love them frozen as a snack on a hot day. It’s fun to listen to my kids explain to their friends that yes these ARE candy! Mother natures candy!

Great recipe! It can be difficult to get kids to eat healthy but most of the time all it takes is a little creativity.

One of my kid’s favorites is pea pesto… We love it and it’s choc-full of peas!
