Personal Meatloaf & Greens
Ingredients
- 1 pound beef, ground, 95% lean
- 1 large egg
- 1/2 medium onion
- 1/4 cup panko (Japanese bread crumbs)
- 3 tablespoon ketchup
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 3/4 teaspoon black pepper, ground
- 2 tablespoon olive oil
Serve With
- 4 medium kiwi
- 2 tablespoon olive oil
- 4 cup green beans
Instructions
- Preheat oven to 400 degrees. In a bowl, combine beef, egg, diced onion, breadcrumbs, 2 tablespoons ketchup, Worcestershire sauce, 1/4 teaspoon garlic powder, 1/4 teaspoon salt and 1/4 teaspoon pepper. Blend together and then form into a loaf pan. Brush the tops with ketchup. Place meat loaves onto the bottom rack of hot oven.
- In a clean bowl, toss the green beans with olive oil, and remaining salt and pepper. Spread on baking sheet and place on the upper rack and roast until the beans are tender and the meatloaves are no longer pink; approximately 20-30 minutes (You can also check the meat with a thermometer, looking for an internal temperature of 165 degrees Fahrenheit).
- Serve with sliced kiwi.
