Easy Steps To Roasting Vegetables


I’ve decided roasted vegetables are too delicious to be considered healthy! Really! I feel like I’m cheating on a diet when I eat them, and vegetables are the perfect food to add to our Letter-V round-up! The steps couldn’t be more simple.DSC_0478

  1. Wash and chop vegetables.  Great veggies for roasting include
    • Broccoli
    • Peppers
    • Onions
    • Zucchini or any squash
    • Potatoes
    • Brussels Sprouts
  2. Arrange veggies in a single layer on a broiler pan.
  3. Place in the oven, close to the broiler, and broil on High for 7-8 minutes, or until  they are browned to your liking.

The roasting process takes out the bitterness, and brings out the sweetness of the vegetables!   Although we are super happy with the veggies roasted with nothing on it, you can start getting creative and making them super good.

Adding seasonings to the vegetables will give you variety for each night of the week.  We like to drizzle olive oil and sprinkle with Parmesan Cheese and salt.   So little work, for such amazing food!  How do your kids like their roasted vegetables seasoned?

I do love how easy it is. I always forget about Brussels sprouts until you post about them, definitely need to acquaint the kids with that one.
I like balsamic vinegar on asparagus sprinkled with Parmesan cheese the best!

Thanks for the vegetable roasting method. My son loves broccoli at the restaurants, but we are always trying different “frozen” brands for the microwave for him. I will have to try this so we can do away with the frozen and bring in the fresh!

Oh my goodness, I feel starving now. You have a simple dish but it’s very inviting. I wish my child would appreciate this kind of food. But to the fact that it contains healthy stuff, I would convince them. Thank you for sharing this delicious post!
