I’ve decided roasted vegetables are too delicious to be considered healthy! Really! I feel like I’m cheating on a diet when I eat them, and vegetables are the perfect food to add to our Letter-V round-up! The steps couldn’t be more simple.
- Wash and chop vegetables. Great veggies for roasting include
- Zucchini or any squash
- Brussels Sprouts
- Arrange veggies in a single layer on a broiler pan.
- Place in the oven, close to the broiler, and broil on High for 7-8 minutes, or until they are browned to your liking.
The roasting process takes out the bitterness, and brings out the sweetness of the vegetables! Although we are super happy with the veggies roasted with nothing on it, you can start getting creative and making them super good.
Adding seasonings to the vegetables will give you variety for each night of the week. We like to drizzle olive oil and sprinkle with Parmesan Cheese and salt. So little work, for such amazing food! How do your kids like their roasted vegetables seasoned?
