Breakfast Pancake Panini
A soft and fluffy spin on breakfast paninis, this no-sugar-added recipe makes for a warm, creative way to start your whole family's day.

Ingredients
Pancakes
- 2 cup flour, whole wheat
- 3 cup flour, all-purpose
- 1 1/4 cup powdered milk
- 1/4 cup sugar
- 6 teaspoon baking powder
- 1 teaspoon salt
- 1 cup water
- 2 tablespoon olive oil
- 1 large egg
Panini
- 4 large egg
- 1 medium apple
- 4 slice cheddar cheese
- 2 slice Canadian Bacon
- 1/2 cup spinach
Instructions
- Mix the master blend first. Place all but 1 1/2 cups of mix sealed away in a closed container.
- In a medium sized bowl mix together water, oil and egg; gradually add the 1 1/2 cups of master pancake mix.
- Spray a medium sized skillet (or griddle) with cooking spray, then heat skillet over medium heat. Pour 1/4 cup of prepared pancake batter into skillet per each pancake. Cook until browned on each side; repeat until all batter is used.
- Cook 4 eggs as desired (fried or scrambled). While eggs cook, slice apple thinly, set aside. Place an egg, slice of cheese, Canadian bacon, & spinach in between 2 pancakes. Cook on a panini maker or indoor grill for 3-4 minutes or until cheese is melted.
