Orange Cranberry Muffins

orange cranberry muffin 2OK, there is no marmalade in this recipe, but it’s still delicious!  Orange cranberry muffins! Fresh Cranberries alone are not too great in my opinion, but put them in a muffin, and somehow their juiciness explodes in your mouth and they are divine!  WHFoods states,

In much the same way as cranberries may help prevent bacterial attachment to the lining of the urinary tract, they may also help prevent attachment of bacteria to the stomach lining. There is already some preliminary evidence that cranberry may help protect us from stomach ulcer in this way.

Cranberries have a substantial amount of phytonutrients and vitamin C.  They are a great addition to a healthy diet.

Orange Cranberry Muffins Recipe

  • 1/2 cup orange juice
  • 1/2 cup low-fat milk
  • 1/4 cup canola oil
  • 1 TBL grated orange peel
  • 2 egg whites

Mix wet ingredients.  In separate bowl mix:

  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1/3 cup sugar
  • 1 TBL baking powder
  • 1/2 tsp. salt
  • 1 cup fresh cranberries, chopped.

Fold wet ingredients into dry ingredients.  Scoop into prepared muffin tin. Sprinkle top of muffin with sugar.  Bake at 400 for 15-25 minutes or until cooked through.  Makes 12 muffins.

I just finished making these. I used olive oil, because that is what I had, also I didnt use the butter because after I Google the difference between Canola oil, Olive oil and butter ..I thought Olive oil would be healthier than butter. I will let you know how my kids liked it. Plan on serving with Turkey Bacon and maybe your peach smoothie or just fruit. Thanks for all these great ideas.
