Grilled Coconut AB

  • 8 slice bread, whole wheat
  • 4 tbsp almond butter
  • 4 oz coconut flakes
  • 1/4 fruit pineapple
  • 1 cup sugar snap peas


  • Preheat sandwich press. (If you do not have a sandwich press, simply use a skillet as you would when making your typical grilled cheese sandwich). Cut pineapple into chunks, if desired heat sugar snap peas at this time as well.
  • Spread almond butter (or your favorite nut butter) onto bread, sprinkle each with coconut flakes and top off with second slice of bread; place into sandwich press and toast until warm. Repeat with each sandwich. 
  • Serve with pineapple and sugar snap peas.
