- 1 medium cucumber
- 1 medium bell pepper, orange
- 8 slice bread, whole wheat
- 1 1/2 cup hummus
- 2 cup spinach
- 2 cup grapes
- Cut cucumber into slices and pepper into strips.
- One one slice of bread, spread hummus. Add spinach, cucumbers and pepper slices. Top with other slice of bread.
- Do for all four sandwiches. Serve with grapes.
