No-Fuss Veggie Sandwich Lunch

  • 1 medium cucumber
  • 1 medium bell pepper, orange
  • 8 slice bread, whole wheat
  • 1 1/2 cup hummus
  • 2 cup spinach
  • 2 cup grapes


  • Cut cucumber into slices and pepper into strips.  
  • One one slice of bread, spread hummus. Add spinach, cucumbers and pepper slices. Top with other slice of bread.
  • Do for all four sandwiches. Serve with grapes.
