Nana’s Goulash
Goulash is a Hungarian dish, a rich stew made with meat and vegetables. The American version typically includes pasta and is a quick, flavorful and nutritious weeknight dinner!
Ingredients
- 8 ounce elbow noodles
- 1 pound turkey, ground
- 1 medium onion
- 1 medium bell pepper, green
- 1 cup corn, frozen
- 29 ounce tomato sauce
- 14 1/2 ounce diced tomatoes, canned
- 1 tablespoon sugar
- 2 tablespoon soy sauce, gluten free
- 1 teaspoon Worcestershire sauce
- 1 teaspoon salt
Serve With
- 2 cup grapes
Instructions
- Cook pasta to al dente, as directed on the package. Drain and set aside, covered.
- Meanwhile, heat a large pot over medium and add ground turkey. Saute and crumble until no longer pink; draining any excess fat if necessary.
- Chop onion and pepper; add to turkey along with corn. Continue to cook for 5-6 minutes, allowing veggies to begin softening.
- Add tomato sauce, drained tomatoes, sugar, soy sauce, Worcestershire sauce and salt. Mix to thoroughly combine.
- Allow mixture to come to a low boil; reduce heat and simmer for 5 minutes. Add pasta; stir to combine. Cover and simmer for 10-15 minutes.
- Serve warm with grapes on the side.
