Mexican Fried Rice with Fruit & Cheese
Ingredients
- 1 cup brown rice, raw
- 15 ounce black beans, canned
- 2 teaspoon canola oil
- 4 large egg
- 1 cup corn, frozen
- 1 cup salsa
- 1/2 teaspoon cumin, ground
- 1/2 cup feta cheese crumbles
Serve With
- 2 cup carrots, baby
- 2 cup blackberries
Instructions
- Cook rice as directed on package.
- After rice is cooked, drain and rinse beans; set aside. Heat 1 teaspoon of oil in a wok over medium-high. Whisk eggs and add to wok. Stir to scramble then remove from wok. Add remaining 1 teaspoon oil to wok along with rice, beans, corn, salsa and cumin. Cook and stir for 2-3 minutes or until heated through. Return eggs to wok and stir to combine. Sprinkle with feta and allow to melt.
- Serve fried rice with carrots and blackberries on the side.
