Menu Ideas and Healthy Meal Planning

I have an old post that I just found with great ideas for creating a menu.  My plan when I wrote it was I was going to simplify meal planning by following this pattern:

Breakfast Lunch Snack Dinner
Monday Smoothies Sandwiches Fruit Mexican
Tuesday Oatmeal Green salads Nuts and dried fruit Italian
Wednesday Eggs Wraps Vegetables Chinese
Thursday Pancakes/ waffles Pasta Grains American
Friday Muffins/ fruit salad Soup Fruits or veggies Vegetarian


I love it, so I’m going to use it this week!






Pink Smoothies

Apple Pie Sandwiches with carrots

Homemade Fruit roll ups



peaches and cream oatmeal

Baja coleslaw

Trail Mix

Avocado Pizza on French Bread


Egg Pepper Flowers

Alfalfa Wraps

Vegetable Tray

Chicken Kabobs with Asian Dipping sauce


Christmas ornament pancakes

Zesty Garden Pasta

Banana Cookies

BBQ Chicken and baked potatoes with green salad


Triple Almond Muffins

Butternut Squash Soup

Fruit Sushi

Veggie burgers and homemade fries


My neighbor (who I mentioned last week, the dietitian) and I are working tirelessly on getting a new site for just meal plans! I’m so excited about it. I can’t wait till January 1st when we will have content there for you. We’ll have the meal plans, recipes, nutrition information for each plan, plus videos on how to prepare foods you might not be familiar with.  Stay tuned! 2011 is almost over! The kids are starting to have performances at school with what they’ve been doing. Erica just finished a choir-play type thing about pirates.

But we still have a play about Fairy Tales, TJ is a pig.  A band concert, piano concert, flute recital, and a Christmas sing. hope we don’t forget anything.
