Lite Chicken Salad Sandwich
Ingredients
- 1 pound rotisserie chicken
- 1 stalk green onion
- 1/4 cup yogurt, plain, low-fat
- 1/4 cup mayonnaise, light
- 1 teaspoon rosemary, fresh
- 1 teaspoon mustard, dijon
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper, ground
- 1/8 cup almonds, sliced
- 8 slice bread, whole wheat
- 1 medium tomato, red
- 4 leaf lettuce, romaine
- 1 cup alfalfa sprouts
Serve With
- 1 medium cucumber
- 4 medium tangerine (mandarin orange)
Instructions
- Chop or shred chicken (about 3 cups worth). Chop green onion; slice tomato and cucumber.
- Mix together yogurt, mayo, rosemary, mustard, salt, and pepper.
- Add almonds, onions, and chicken to the mayo mixture and stir to combine.
- Spread mixture equally onto 4 pieces of bread, then top each with a tomato slice, a lettuce leaf, and some sprouts.
- Serve sandwiches with cucumber slices and tangerines on the side.
