  • 1 medium avocado
  • 4 medium carrot
  • 8 slice bread, whole wheat
  • 4 ounce cheddar cheese
  • 8 leaf outer lettuce
  • 1 medium tomato, red

Serve With

  • 4 medium apple


  • Scoop out the flesh and mash an avocado.  Grate 2 of the carrots.
  • Toast bread, spread avocado on each slice of bread. Layer each sandwich with cheese, lettuce, sliced tomatoes and grated carrots. Serve with extra carrots and sliced apples.
