- 1 cup corn, frozen
- 2 cup, chopped kale
- 4 medium tortilla, whole wheat
- 1/2 cup hummus
- 1 cup Red Beans, Canned
- 1 medium avocado
- 4 medium kiwi
- Allow corn to defrost first, or heat according to package directions. Chop kale into thin shredded slices.
- Lay out tortillas; smear 2 tablespoons hummus onto each tortilla. Next add 1/2 cup chopped kale, 1/4 cup defrosted corn, 1/4 cup beans and 1/4 of avocado, sliced. Roll up and serve each with a kiwi.
