Sweet potatoes are such an amazing veggie because when you cook them, they literally spill out a super sweet natural sugar.  But the best part about sweet potatoes is how much nutrition they pack.   They are high in beta-carotene, Vitamin C, manganese, and fiber.   Sweet potatoes are delicious on their own, but these Italian Chicken and Spinach Stuffed Sweet Potatoes make a complete and delicious savory meal.

This recipe is a complete meal, but is incredibly simple to make.  Bake your sweet potatoes in the oven until soft.   Scoop out the inside and set aside.  Drizzle the skins with olive oil, and put back in the oven for 10 minutes to crisp up the skins.  Meanwhile,  in another bowl, shred chicken breast, chop spinach, and add the remaining ingredients.  Combine with sweet potato.  Scoop the mixture into the potato skins.  Top with shredded mozzarella, or your favorite cheese and bake again until cheese is melted and bubbly.

The secret to crispy is to drizzle the skins with olive oil, and put back in the oven for 10 minutes to crisp up the skins.

  • Preheat oven to 400 degrees F.
  • Wash potatoes well and bake for 45 minutes – 1 hour or until soft and a fork can prick through the middle.
  • Cut in half and scrape the inside out and set aside.
  • Drizzle skins with olive oil and bake for 10 more minutes or until skins are crispy.
  • In the meantime, shred cooked chicken breast, chop spinach, and add remaining ingredients.  Mix.
  • Mix chicken mixture together with sweet potatoes.
  • When  the skins are done baking, fill each skin with the chicken/sweet potato mixture.
  • Top with shredded mozzarella and bake until cheese is melted and bubbly.

Can these be frozen? And how would you reheat them? I’m am trying to stock my freezer with healthy meals before baby # 3 gets here.

I haven’t tried freezing them. Honestly – they might be mushy or watery after thawing and reheating.

How is the chicken being prepared? It’s not specific in the recipe. Also do you have the nutrition information available for this?

Its actually not whole milk – it is mozzarella cheese – just not the skim milk variety. Really you can use either 🙂

Honestly, it wasn’t great. I feel like the 5-6 mins that you put the completed ensemble into the oven during the cheese melting part, isn’t enough to cook the spinach (?) properly. Also the instructions weren’t very clear on how to prepare the chicken: if you just bake it/boil it, and then put it together, it’s very tasteless. Clearly some steps need to be added in to make the chicken preparation more clear.

SOO salty. My husband double checked and he definitely only put 2 teaspoons of garlic salt. We threw them all away because they were so salty.
