Hummus Cucumber Cups
Ingredients
- 3 medium cucumber
- 1/2 medium bell pepper, red
- 1 cup hummus
- 1 teaspoon paprika
Instructions
- Slice cucumbers into thick rounds. Use a melon baller (or small spoon) to scoop out a small section in the center of each slice, making a small “cup”; set aside.
- Chop bell pepper and add to food processor along with hummus; pulse a few times to gently blend. Spoon into the cucumber “cups,” and garnish each with a dash of paprika. Serve.
