  • 1 medium cucumber
  • 8 slice bread, whole wheat
  • 1 cup hummus
  • 1 cup spinach
  • 4 medium banana
  • 4 stick string cheese


  • Thinly slice cucumber; set aside.
  • Spread each slice of bread with hummus; add cucumbers and spinach; make four sandwiches and cut into quarters.
  • Serve sandwiches with bananas and cheese sticks on the side.
