Hummus and Avocado Toast

  • 8 slice bread, whole wheat
  • 1/2 cup hummus
  • 1 medium avocado
  • 1 medium tomato, red
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper, ground
  • 4 medium plum
  • 2 medium bell pepper, yellow


  • Toast bread.  Spread hummus on toast.
  • Remove avocado from skin and mash in a bowl. Spread over hummus.
  • Slice tomato and add to sandwich. Season with salt and pepper.
  • Slice peppers and serve with sandwich along with plums.
