Halloween Soup Recipe

There are only two ways that I personally like cooked carrots.  One is shredded thinly, and the other is in soup.  Since we are still trying to use up our carrots around here, we decided to make soup.

This creamy potato soup is so much tastier with carrots!  In a creamy soup like this, you can take a big portion of the “visible” carrots and put them in a blender, to be returned to the soup as part of the soups sauce.  I did this with some of the carrots, but also left a lot of the carrots whole.

We followed this recipe, and then put it into pumpkin bread bowls!

Adorable! and what a great way to get some extra veggies into the meal! Soph loves carrots and Alex has been wanting to try making potato soup from a recipe he found….I think we might be combining the two soon 😀

It’s a local story 🙁 The chain is Associate Foods, (which I thought was Utah only), and then my store is Kohlers. Good luck though, I bet there are other bakery’s making these!

I wish I made them 🙂 I didn’t say anything about the bread bowls cause I picked them up at my local grocery store. In the bakery dept. they sell two pumpkin bowls for $1.49! Bargain, right??

The soup looks great but my question is how did you make those bread bowls? I would definitely like to try this for halloween with my son.
