Halloween Soup Recipe
There are only two ways that I personally like cooked carrots. One is shredded thinly, and the other is in soup. Since we are still trying to use up our carrots around here, we decided to make soup.
This creamy potato soup is so much tastier with carrots! In a creamy soup like this, you can take a big portion of the “visible” carrots and put them in a blender, to be returned to the soup as part of the soups sauce. I did this with some of the carrots, but also left a lot of the carrots whole.
We followed this recipe, and then put it into pumpkin bread bowls!
