Fun-do Lunchtime
Ingredients
- 2 medium apple
- 1 teaspoon lemon juice
- 2 medium banana
- 12 each bell pepper, mini
- 1 cup broccoli, florets
- 8 slice turkey breast, deli style
- 4 ounce cheddar cheese
- 1 cup strawberries
- 1 cup Greek yogurt, plain
- 1/4 cup sunflower butter
- 4 teaspoon agave nectar
- 1 teaspoon cinnamon
- 1/4 cup salsa
- 1/4 cup ranch dressing, low fat
Instructions
- Slice apples and toss in lemon juice to prevent browning. Slice bananas, halve peppers, and chop broccoli and cheese into bite-sized pieces. Slice strawberries. Roll up turkey slices and skewer onto toothpicks, alternated with the cheese. Place into divided lunchbox with remaining fruits and veggies.
- In a small bowl, mix together yogurt, sunflower seed butter, agave and cinnamon; place into a small container for lunchbox. Add salsa and ranch in separate containers into the lunchbox for a dippin’ good lunch!
