In a shallow dish, mix eggs, milk, cinnamon and vanilla. Dip bread, one at a time into the egg mixture.
Spray a griddle or skillet with cooking spray, and cook the egg soaked bread on both sides until browned. Remove and set aside.
After all your French Toast is cooked, return 4 slices of bread to the pan and top with one slice of mozzarella cheese. Top with the other slice of bread to make a sandwich. Cook on both sides to allow the heat to melt the cheese.
Serve with sliced bananas.
