French Toast Sandwiches with Bananas

French Toast Sandwiches with Bananas
Serves: 4
Serving Size = 1 sandwich with 1 banana


  • 6 medium – egg
  • 1/8 cup – Milk, Low fat 1%
  • 1 tsp – cinnamon
  • 1 tsp – vanilla extract
  • 4 oz – mozzarella cheese
  • 8 slice – bread, wheat
  • 4 medium (7" to 7-7/8" long) – banana


In a shallow dish, mix eggs, milk, cinnamon and vanilla.  Dip bread, one at a time into the egg mixture.  

Spray a griddle or skillet with cooking spray, and cook the egg soaked bread on both sides until browned.  Remove and set aside.

After all your French Toast is cooked, return 4 slices of bread to the pan and top with one slice of mozzarella cheese.  Top with the other slice of bread to make a sandwich.  Cook on both sides to allow the heat to melt the cheese.

Serve with sliced bananas.

Kids and I loved this! I couldn’t bring myself to put mozzarella on French toast so I used cream cheese instead and put sliced bananas inside. Also FYI .13 cup = 2 Tbsp. :). Had a ton of egg dip left over so made extra french toast and will freeze for snacks.

Ha ha.. you totally should have tried the mozzarella!! We were surprised at how great it was!
But the cream cheese and bananas inside seems amazing.

Sorry about the funky measurements. We had to use 0.125 to translate to 1/8 cup (or 3 TBL), and it kept rounding up. I thought it was fixed.
