Cucumber Cups with Hummus & Cottage Cheese
Ingredients
- 2 medium cucumber
- 2 medium carrot
- 1/2 cup hummus
- 1/2 cup cottage cheese
- 2 serving crackers, whole-wheat
Instructions
- Peel cucumbers and cut each into four pieces across the width; be sure to cut the ends a little bit so that those pieces are able to stand up. Using a small melon baller, scoop out the inside while leaving a small amount on one end so the filling will not fall out. Repeat with all cucumbers.
- Peel and cut carrots into small sticks.
- Fill each cucumber cup with either hummus and carrot sticks or cottage cheese and bits of crackers.
