This light and flavorful Cucumber Sandwich has a cool crunch and a subtle, refreshing taste, perfect for warm summer days or even an elegant tea party.

Ingredients
- 8 ounces cream cheese softened
- 1/4 cup fresh dill
- 2 tablespoons fresh chives
- 2 tablespoons plain Greek yogurt
- 2 teaspoons lemon juice
- salt and pepper to taste
- 2 medium English cucumbers
- 8 slices white sandwich bread
Instructions
- Place softened cream cheese in a medium bowl. Mince the fresh dill and chives and add them to the bowl. Add the Greek yogurt, lemon juice and salt and pepper to taste. Stir to combine everything until well blended.
- Using a spatula, evenly spread the cream cheese mixture onto 4 of the slices of bread leaving a small border around the edge.
- Using a mandolin or sharp knife, slice the cucumbers into very thin slices. Layer cucumber slices on top of the cream cheese mixture on the bread. Top with the other slice of bread.
- If you want to be extra fancy, cut the crusts off the bread and then cut the sandwiches into small squares. Serve immediately and enjoy!
