Ingredients

  • 2 cup oats, dry
  • 4 cup water
  • 1/4 cup maple syrup, pure
  • 1/4 cup coconut flakes
  • 4 teaspoon vanilla extract
  • 2 cup blueberries, frozen
  • 1 teaspoon sugar
  • 1/8 cup lemon juice
  • 1 tablespoon water
  • 1 cup coconut milk

Instructions

  • Place oats, water, maple syrup, coconut, and vanilla in a small saucepan and stir well to combine. Heat over medium-low, stirring often to avoid sticking. Cook for 4-5 minutes or until the oats have become creamy and thick.
  • Mix blueberries, sugar, lemon juice, and 1 tablespoon water in a separate saucepan; stir well and heat over medium until the berries begin to pop. Simmer for 1-2 minutes and then remove from heat.
  • Stir berries into oats. Serve each serving topped with 1/4 cup coconut milk.
