My kids and I have been very fortunate to not have to worry about food allergies and other issues that have to do with foods, like a gluten or lactose intolerance, but I know that there are many adults and children that struggle with these problems.

Every now and then I’ll dabble in specialty diet recipes for fun. Today I am focusing on a gluten-free dessert, mainly because I have a friend who has celiac disease, and I want to learn to make things she can eat. I was at Winco a little while ago and picked up some coconut flour and coconut sugar in their bulk section. I just wanted to try my hand at a gluten-free dessert that would typically use regular white flour, plus the coconut flour smelled really good! Haha.

I hadn’t even researched any recipes when I picked up a few cups of coconut flour, so I was really surprised to learn how little coconut flour you actually use compared to white flour (1/4 cup coconut flour for every 1 cup of white flour).  King Arthur coconut flour is one of our favorite brands.  When you use coconut flour, you also use a lot more eggs (about 1 egg per 1-ounce of coconut flour). It’s kind of cool that it magically works to create baked goods though.

This coconut flour brownie is more cake-like than fudgy, but it was still delicious with a scoop of ice cream and fresh sliced strawberries on top. We even put it in a milkshake! Yum! Overall, I think this was a great wheat-free alternative to a classic dessert! Now, I’m taking suggestions on what to try with the rest of all that coconut flour that I bought.   • Heat oven to 350 degrees Fahrenheit.
  • Melt the coconut oil in a small saucepan with the cocoa powder. Remove from heat. Cool slightly.
  • In a large bowl, whisk together the eggs, coconut sugar, milk, and salt.
  • Briskly whisk in the cocoa mixture. Whisk in the coconut flour until combined.
  • Pour batter into a greased 8×8-inch square baking dish.
  • Bake for 25 to 30 minutes until a toothpick comes out clean in the center.

I used one pureed sweet potato as a replacement for a half of coconut oil and a half of sugar. Brownies turned out great! They were rich, moist and healthier I believe. My kids loved them.

I “breaded” chicken with coconut flour and used a vanilla yogurt wash instead of egg. It was amazing and my kid with multiple food allergies could eat it so win-win.

After I tried cooking it, my son is very fond of it. But the suggestion of my input for “Coconut Flour Brownies Recipe”, add 1/2 cup of milk is better and I only use 4 eggs after cooking a second time. And I think it was more perfect, you can try it.

That’s hard to say because everyone’s tastes for coconut are different. I love coconut, but I don’t think they were very strong of coconut flavor. The cocoa kind of covers it up. Let us know what you think if you decide to try it!

I make pancakes with coconut flour and almond flour. So delicious! I mash two Bananas, add four eggs, a teaspoon of vanilla extract, cinnamon spice, flax seed, chia seed, honey / coconut sugar, mix that all together and I then add in my almond flour and coconut flour. Later I add in vegan chocolate chips. I make those into muffins or pancakes.

Mix coconut flour with paprika,salt & pepper and use it to bread chicken. Fry it in coconut or peanut oil for great gluten free chicken nuggets.

I can’t say for sure because I haven’t tried it. I’m not sure if substituting eggs with applesauce works the same way with coconut flour recipes as it does with all-purpose flour recipes. I’ve read that you can substitute 1 tablespoon of flax seeds soaked in 3 tablespoons water for every (1) egg though.

Can you omit cocoa pwdr and add something to make this pumpkin “cake” or ginger bread? These are the best brownies i have ever had…EVER!

Can you tell me if i drop the eggs to 4, replace the cocoa pwdr with pumpkin and added cinnamon and cloves or ginger…would that work you think? I think i will try that today

I made these today and they turned out great but were far too sweet for my own and my daughter’s taste. If I added half the amount of sugar would this affect the final result? Would it turn out more like a cake?

In step 2 you melt the coconut oil and cocoa powder together and then add that mixture in during step 3. Let me know if you have other questions!
