Cinco de Mayo Mini Beany Cheese-tada

Cinco de Mayo is just around the corner, and what better way to celebrate than with Mexican Inspired Food!   One go-to website that always has amazing ideas for healthy celebrations is Produce For Kids.  They were the inspiration for this delicious fruit cake I posted way back.  Today, they are the inspiration for our mini Beany Cheese-tada’s! We made them mini, simply by cutting our corn tortillas in small circles.

Mini cheese tada
  • 2 medium (6-inch) corn tortillas
  • ½ cup mashed pinto beans (drain if using canned)
  • 2 oz. grated Monterey Jack cheese
  • ½ cup shredded Romaine lettuce
  • ½ cup grape tomatoes, cut in halves

Toast tortilla shells to desired crispiness. Spread heated mashed beans equally on top of the tortillas. Spread half of lettuce, cheese, tomatoes and salsa on each.

Produce for kids has fabulous meal ideas! They have recipe cards distributed in the produce sections of grocery stores around the country.  They’ve graciously agreed to send one Super Healthy Kids Reader, some meal cards, and other promotional items (pens, magnets, and a vegetable peeler).

Make that with Cotija or some queso fresco instead of the monterey jack and I’m all in! I’m think I’m making tostadas for dinner now, yum!!!

Some ground meat in tomato sauce and beans will be my dip!
