Need a veggie appetizer for holiday festivities?  Here is a fun one your kids can help with.  For cucumber cups anytime of year, simply

  1. slice cucumbers into 1 inch chunks.
  2. With a small teaspoon, scoop a bowl out of the top.
  3. Fill well with low fat ranch, plain yogurt, or low fat sour cream and ranch seasoning.
  4. Top with veggies like finely chopped peppers.

To turn these cucumber cups into wreaths, simply sprinkle green and red peppers around the outside of the cucumber, rather than in the middle!!

You can have fun with this idea with a variety of fillings, and different vegetables on top!

I do agree with it that they are best christmas cups.

I LOVE this idea! I especially love how it is fun, creative *and* healthy 🙂 So many Christmas treats are candy, chocolates and junk food. I always try to make healthy snacks fun too 🙂
