Chimichurri On a Roll
Ingredients
- 4 roll (3-1/2″ dia) rolls, hard
- 4 piece Chicken Breast Tenders, Cooked
- 2 cup shredded lettuce
- 1 cup, chopped kale
- 1 medium (approx 2-3/4″ long, 2-1/2″ dia) bell pepper, green
- 3 cup grapes
Instructions
- Slice chicken into pieces that will fit onto the rolls (one tender per roll), layer each roll with 1 kale leaf, 1/2 cup lettuce and some pepper slices and your choice of condiments. Serve with grapes and leftover veggies from the week (I had some extra peppers)
