Chicken Sandwich with Veggies

  • 2 breast bone and skin r Chicken Breast, Boneless, Skinless
  • 8 slice bread, whole wheat
  • 4 oz Romano cheese
  • 2 cup shredded lettuce
  • 1 medium (approx 2-3/4″ long, 2-1/2 dia.) bell pepper, red
  • 4 medium carrot
  • 1 cucumber (8-1/4″) cucumber
  • 4 medium (3″ dia) apple


  • Using last night’s leftover chicken, assemble sandwiches with cheese, lettuce and pepper. Serve with carrot sticks, sliced cucumbers and apples.
