  • 1/2 teaspoon tarragon, dried, ground
  • 1 cup Greek yogurt, plain
  • 3 tablespoon mayonnaise, light
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1 chicken breast
  • 2 cup shredded lettuce
  • 1 cup spinach
  • 4 medium whole wheat dinner rolls

Serve With

  • 2 medium orange


  • In a small bowl whisk tarragon, yogurt, mayonnaise, lemon juice and salt. Shred cooked or leftover chicken breast and add to mixture. Build a sandwich on a roll with chicken salad, lettuce, and spinach.
  • Serve with oranges.
