  • 2 tablespoon olive oil
  • 2 squash (4 inch dia) acorn squash
  • 1/2 salt
  • 1/2 black pepper, ground
  • 2 honey


  • Preheat oven to 350 degrees. Rub a small amount of oil onto a baking sheet.
  • Slice squash into 1/2 inch rounds.  Remove the seeds and place each onto prepared baking sheet. Brush each squash piece with additional olive oil. Sprinkle with salt and pepper and drizzle with honey.
  • Bake for 5-10 minutes, until tender and caramelized. Allow to cool to the touch before serving.
