Bean Dip and Veggies
Ingredients
- 2 cup black beans, canned
- 1/2 medium lime
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin, ground
- 1/4 teaspoon salt
- 1 medium bell pepper, red
- 1 medium bell pepper, green
- 2 medium carrot
Instructions
- Drain the beans (reserving 2 tablespoons of the liquid); rinse beans well. Toss beans into a food processor along with the reserved liquid and the juice from the lime. Add the garlic powder, cumin and salt. Blend well.
- Cut veggies into sticks or any other fun shape (like hearts for the carrots!) and serve with the dip.
