Baby Food, meals, and More

OK, not really.. More.. But Baby food- Some of you would like me to post more about healthy baby food.  Here is the problem, I don’t have any babies!  I can’t even remember feeding the ones I did have.  Really, I have very short term memory.  But there are plenty of awesome people right in the throws of babyhood.  You can start with Traci. She even taught a class in Utah County this week about making baby food.  Her Baby food Puree is here.  And what you can freeze, here.  And because no post is complete without a photo.. Here is my favorite baby! The kid just won’t keep his tongue in his mouth. It’s so stinking cute!

DSC_0418 Next- This week’s menu.  I’m so glad many of you come to this blog for the meal plans.  Although It’s hard for me to stick to a menu, it drastically reduces the tendency to “pick something up”, or make a box of mac and cheese.  Unfortunately for my kids, when I don’t plan something, I DON’T settle for take out or mac and cheese, instead I make nothing, and they eat cereal.  Poor, poor kids 🙁

Monday Apple cinnamon Oatmeal English muffin pizza with chicken Banana Yogurt Pops Mini chicken pot pies (veggies inside)
Tuesday Scrambled eggs and bananas Mexican Quesadillas Protein Energy Bars Mini hamburgers with sweet potato fries
Wednesday Cereal Parfaits “Face sandwiches” English muffin- Nut (peanut butter) apples and raisins) Fig Energy Bars Vegetable Stromboli with fruit salad
Thursday Green Smoothie Chicken/ Corn/ Black beans * See below Nutty Health Bar Quinoa Chili! Looks really good!
Friday Cinnamon Raisin French Toast with sliced apples Veggie wrap with light cream cheese, Whole wheat tortilla and vegetables Baked Sweet Potato Chips Layered Greek Pasta Bake

Monday – Another giveaway!

Chicken/ Corn/ Blackbeans- This was so easy, and I could probably eat the whole bowl myself. I don’t know how my kids will take to it. But it was a great lunch for me.

  • 1/2 cup fat free mayo
  • 1/2 cup sour cream
  • dash of cumin
  • splash of lime juice
  • can of black beans
  • can of corn
  • can of shredded chicken

I think that it’s time that I started menu planning more than just dinner. We usually just wing lunch, but that gets to be hard, and I get sloppy with lunch. Keep the ideas coming! And…I hope that you like the pasta bake! I’m always a little surprised at how much my kids love it!
