Ingredients

  • 4 large egg
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper, ground
  • 1 medium avocado
  • 4 slice bread, whole wheat

Serve With

  • 4 medium orange

Instructions

  • Spray skillet with cooking spray and heat over medium.
  • Whisk together eggs, salt, and pepper. Pour into skillet and scramble for 2-3 minutes. Cook until no longer runny.
  • Remove the skin and pit from the avocado and lightly mash.
  • Toast bread; spread each with avocado and scrambled eggs.
  • Serve with orange wedges on the side.
