  • 4 small rolls, dinner, wheat
  • 1 medium avocado
  • 1 medium cucumber
  • 4 slice ham, deli sliced
  • 4 leaf inner lettuce
  • 1 cup spinach

Serve With

  • 1 cup pineapple
  • 2 fruit clementine
  • 1/2 cup coconut flakes


  • Slice rolls in half horizontally. Slice avocado and cucumber. Top bottom half of rolls with ham, avocado and cucumber slices, lettuce, and spinach. Top with other half of roll and slice in half.
  • For fruit salad: mix cubed pineapple, clementine wedges, and shredded coconut in a bowl.
  • Serve sandwiches with fruit salad on the side.
