Ingredients

  • 6 large egg
  • 1/4 medium onion
  • 1 medium tomato, red
  • 1 medium avocado
  • 1 medium lemon
  • 1/4 cup Greek yogurt, plain
  • 4 teaspoon mustard
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 8 slice bread, whole wheat
  • 8 leaf outer lettuce

Serve With

  • 4 medium apple

Instructions

  • Hard boil eggs and set aside to cool.
  • Peel eggs, mince onion, and slice tomato.
  • Mash eggs together with avocado, onion, juice of lemon, yogurt, mustard, onion powder, garlic powder, and salt.
  • Layer one slice of bread with lettuce, tomato, and egg salad; then top with second slice of bread.
  • Cut sandwiches in half and serve with sliced apples on the side.
