Apple Quinoa Salad

  • 1 cup quinoa, uncooked
  • 2 medium apple
  • 1 medium avocado
  • 1 medium bell pepper, red
  • 1 medium tomato, red
  • 3 tablespoon olive oil
  • 3 tablespoon vinegar, rice
  • 1 teaspoon garlic powder
  • 1/2 cup sunflower seeds


  • Cook quinoa as directed on package.
  • Meanwhile, chop apple, avocado, bell pepper and tomato (discard seeds if desired). Combine in a large bowl with oil, vinegar, garlic powder and sunflower seeds. Add quinoa while still warm and toss to coat evenly. Serve immediately or cover and refrigerate for later.
