- 1 medium apple
- 1 medium pear
- 1 stalk celery
- 4 ounce cheddar cheese
- 3 tablespoon olive oil
- 2 tablespoon apple juice
- 1/4 cup peanuts
- Core apple and pear and cut into quarters; then cut crosswise into thin slices. Cut celery diagonally into thin slices. Cut cheese into julienne strips.
- In a medium bowl, mix apple, pear, celery and cheese.
- In a small bowl, thoroughly mix oil and apple juice. Pour over apple mixture; toss to coat. Sprinkle with chopped peanuts.
