  • 4 medium apple
  • 1 teaspoon lemon juice
  • 1/2 cup peanut butter, all-natural
  • 2 stalk celery
  • 1 cup edamame, shelled
  • 1 cup hummus
  • 1/4 cup cranberries, dried
  • 1/2 cup granola


  • Slice apples horizontally; spritz with lemon juice to prevent browning. Spread peanut butter between 2 slices to form apple-peanut butter sandwiches. Continue with remaining apple slices.
  • Cut celery into sticks. Fill lunchbox with apples, celery, edamame, hummus, cranberries and granola.
