Should you include coconut milk in your child’s diet?  YES!  Coconut milk has:

  • Electrolytes, potassium, vitamins, minerals.
  • It is low in sugar (2 grams vs 12 g in cows milk)
  • It’s dairy free (for those lactose intolerant)
  • Vegan/ gluten free
  • There is no need to buy “light” coconut milk. The saturated fat in the coconut milk is being found to be beneficial to heart health, rather than harmful!

We love dessert recipes that also include foods that provide nutrition.  Using brown rice in this recipe provides B vitamins, and fiber.  The almonds provide protein, and fiber as well as minerals.   It is subtly sweet with the honey and so it trains your kids to like things that are a little bit less sweet.  When you buy pre-packaged sweets, they are usually loaded with sugar and a lot of times make you feel sick after you eat them!  Using real whole foods for your desserts doesn’t leave you feeling that way.   A lot of times when we are craving certain foods, it may be because your body really is craving nutrition!

This is also a great recipe to use when you have leftover plain rice.  Just mix the rest of ingredients (minus the water) with the rice in a pot and heat it up until most of the coconut milk has been absorbed.  Make rice once and use it again!  We love when you can use a food for 2 meals.  It saves time, money and is a good way to live your ‘cooking life’.

We love to add slivered almonds on top for that yummy crunch, and also we sometimes add shredded coconut.  It is fun to experiment with different textures and flavors.  We will usually set them out and let our kids add their own toppings!

Yum. My husband loooooves rice pudding. The only change I might make is to add some raisins. Love it when little raisins plump up in rice pudding! 🙂

I make this a little different. I use a whole bag of brown rice and one can of coconut milk. I add cinnamon, almond flavoring, nutmeg, (other spices), raisins or crushed pineapple or mandarin oranges, and evaporated cane juice.

After the rice is done cooking, I add the above ingredients and then add 5 – 8 eggs depending on how many kids are at the table. I cook on low, stirring often, until the eggs are incorporated and cooked.

The kids love my “rice pudding.”

Tina- If you generally make rice on the stove, I would follow the recipe exactly, but just simmer it on the stove until the liquid is absorbed.

I made this tonight on the stove and the flavor is great but it turned out to basically be sweet rice. The pudding consistency just isn’t there. What did I do wrong?

I think it really depends on the rice you use. We had a bag of rice that our Japanese girls brought that was super sticky rice. With regular rice, I would try increasing the liquid until it’s the creamy texture you prefer.

Kate- do you have a rice cooker? We just turn it on until the rice cooker says it’s done- It usually depends on the type of rice you are using. Once all the liquid is absorbed, it should be finished! (about 20-30 minutes in mine)

You can do that Jenny! Just put all the ingredients in a sauce pan, bring it to a boil, then, cover and reduce to a simmer for about 20 minutes.

I’ve seen that you use coconut milk in a few recipes. Do you mean canned, or the stuff in a carton which is more suited for drinking?
